There is a very long list of laws associated with the production of Rhum Agricole. For the sake of digestion and comprehension we will keep it brief but provide a link if you want to explore further. Harvested cane must be from Martinique, from January 1 to August 31, and one of several specified varieties of cane. The cane juice is fermented for a maximum of 120 hours, once distilled and aged for a minimum of 6 weeks. For long-aged rhums the distillate must be kept in a vessel less than 650 liters.
